Hi there, how is everyone doing? I have a fun and exciting weekend ahead of me..I will be sitting in the class both days from 8.30am-4.30pm studying! sigh.. So, tonight I’m busy with preparation for the class, refreshing my memory and going through the old notes. With that sad, I will still share very easy and quick recipe for delicious coconut cake. It takes about an hour from start to finish to make it. Have a great weekend guys!
Cake ingredients: 2 eggs (at room temperature), 200 ml sugar, 50 gr (or 1/4 cup) butter or coconut oil, 100 ml milk, 300 ml (or 1 cup + 1/4 cup) flour, 1 1/2 tsp baking powder, 1 tsp vanilla extract.
Filling: heavy cream and sweetened coconut flakes
Preheat the oven to 340 F. Beat eggs, vanilla and sugar until fluffy and doubled in volume. In small saucepan bring to a boil butter and milk. Pour it slowly into the egg mixture whisking constantly. In separate bowl, sift flour and baking powder. Gently mix in flour to the egg mixture using spatula. Stir as little as possible, just until mixed. Batter the pan (I used 3 small 4 inc baking pans). Pour the batter in and bake for 25-30 minutes. If you use regular 9 inch baking pan, baking time would be longer 35-40 minutes. Prepare your filling by whipping heavy cream and mixing it with sweetened coconut flakes. I can’t tell proportions here as I go by feel and I love cream, so I use quiet a lot… 🙂
Once cake is cooled, assemble it and decorate the way you like it.

I put coconut flakes in my oatmeal. If you look at my oatmeal recipe in my blog, you will see the other toppings I add in my oatmeal. Another coconut use is when I make tapioca, I add coconut flakes there too. Also, in my banana bread recipe. Whew. I’ m going coconuts.
