Weekend is on it’s way and I am super excited about it. What could be better than lazy morning and super fluffy home made pancakes 🙂
Ingredients:
2 cups flour (sifted)
¼ cup sugar
3 ½ tsp baking powder
3 eggs
1 ½ cup wark milk
½ cup melted butter
1 tsp vanilla extract
¼ tsp salt
1.Start with combining together dry ingredients flour, baking soda and salt in a small bowl, set it aside.
2.Separate egg yolks and whites. In a medium bowl beat egg whites until it starts to foam. Then, slowly add sugar and beat on high speed until soft peaks form. Mixture should be like for meringue cookie.
3.In a separate large bowl beat egg yolks until pale yellow colour for about 5 minutes, add vanilla extract and melted butter and mix until incorporated. Slowly add a little bit of milk and flour, repeat until all milk and flour added and mix throughly until batter is smooth.
4.Add to egg yolk mixture egg whites and mix gently with spatula just until its combined. It is important not to overmix it, so pancakes are super fluffy.
5.Fry on a pan until golden colour. I usually do it on high heat. I find that if I fry pancakes on medium heat it takes longer time and pancakes come out flatter and dryer. So I prefer to do it quick on high heat. But everyone has their own system 🙂
Serve it with your favourite jam or maple syrup. I love my pancakes with ricotta cheese and berries 🙂
