This light spongecake can be used as basis for so many cake variations, and goes well with tea or fruits. I used it as a basis for Victoria spongecake, Swedish cake Prinsesstarta, with butter-cream icing, apricot glaze and just simply with powdered sugar on top. I love this time of the year the most. It’s a great opportunity to reflect back on the year, count things to be grateful for and say thank you to special people who made a difference in your life. Most of my gifts I made myself with the help of my husband and few of them were purchased (lightsaber sword hehe-thank you to the new Star Wars). Do you prefer to make or buy gifts?
