2 cups flour (sifted)
¼ cup sugar
3 ½ tsp baking powder
1 ½ cup wark milk
½ cup melted butter
1 tsp vanilla extract
¼ tsp salt
Start with combining together dry ingredients flour, baking soda and salt in a small bowl, set it aside. Separate egg yolks and whites. In a medium bowl beat egg whites until it starts to foam. Then, slowly add sugar and beat on high speed until stiff peaks form. Mixture should be like for meringue cookie.
In a separate large bowl beat egg yolks until pale yellow colour for about 5 minutes, add vanilla extract and melted butter and mix until incorporated. Slowly add alternating a little bit of milk and flour, repeat (in 3 to 4 stages) until all milk and flour added and mix thoroughly until batter is smooth. Add to egg yolk mixture egg whites and fold in gently with spatula just until its combined. It is important not to over mix it, so the batter will not deflate.
Preheat your Belgian waffle maker and cook according instructions. My waffle maker heats up pretty quick, in about 5-7 minutes it is ready. Each waffle takes about 3-4 minutes.
Waffles come out crunchy on outside while soft and chewy on the inside. I hope you like it!
