Coconut Banana Bread

Ingredients: 1 cup flour, 2 tsp baking powder, 1 tsp cinnamon, pinch of salt, 1/2 cup sugar, 2 eggs, 113 gr butter at room temperature, 4 ripe mashed bananas, 1/3 cup sour cream, 1 tsp vanilla extract, 75 gr or 1 cup chopped walnuts, 1 cup unsweetened coconut flakes.

Start by preheating your oven to 350. Lightly grease a loaf pan with butter and leave it aside.

In a medium bowl combine flour, salt, baking powder, cinnamon and coconut flakes. In a large bowl, or stand mixer with a paddle attachment, cream butter and sugar until creamy. Add the eggs and mix well. Add sour cream and vanilla extract and mix just until combined. Mix in bananas. With mixer on low incorporate flour mixture. Last step, stir in walnuts (reserve about a handful of it to put on top of the bread).

Pour the batter into the baking pan and sprinkle reserved walnuts on top, also coconut flakes  would be just great. Bake it for 50-60 minutes. After it is baked, let it sit in the pan for 10 minutes, and invert into the cooling rack.
