Creamy macaroni and blue cheese

Warm coats are coming out and coffee bill is rising steadily.. which means autumn is here finally… πŸ™‚ I believe there are tons of reasons to enjoy this season…like beautiful colours, cozy sweaters, cool tights, hot drinks, caramel apples, thanksgiving, pumpkin carving, and of course, comfort food. Here’s one great recipe for you guys to enjoy this weekend. Stay warm and smile! πŸ˜‰

You will need the following ingredients: 1/2lb any pasta you like, 3 tbsp unsalted butter, 2 tbsp flour, 2 cups warm whole milk, 1 cup mozzarella, 1/2 cup old cheddar, 1/2 cup parmiggiano, 1-2 tbsp blue cheese (depending how much you like it πŸ™‚ ), 1/4 cup bread crumbs, some fried bacon cut into small pieces, 1 tsp olive oil, salt, pepper and spices to taste.

Preheat the oven to 400F and butter baking dish.
Cook pasta according to instructions and drain well (it’s good if you cook pasta just a little bit less than instruction required as it will be cooking in the oven as well).Β Prepare bechamel sauce. Melt butter gently, in a heavy large saucepan over medium high heat. Then add flour and cook for just about 1 minute stirring constantly (do not allow to brown). Whisking in warm milk and simmer until mixture thickens slightly for about 5 minutes, stirring well.Β 
Take it off the heat. Season with pepper, salt, paprika, parsley and basil (or any spices you like). Add grated cheeses (all but couple tbsp of parmiggiano) and whisk until mixture is thick and creamy. Add fried bacon and mix well.Β 
Add sauce to the pasta, stir to coat, and transfer mixture toΒ theΒ baking dish.Β Sprinkle with bread crumbs (it will form such a nice crispy top) and reserved couple tbsp of parmiggiano. Bake for 20 minutes.
