Spicy parmesan cheese puffs (Gougeres)

2015-09-01 09.50.50Let’s enjoy the last warm days of the summer to the fullest. It is Friday, before long weekend and the weather is ridiculously gorgeous here.

Dinner and/or lunch picnic in the park is the most summery thing ever to me (and so romantic 🙂 ). I plan to make butternut squash soup and this much loved in our house spicy parmesan cheese puffs. Grab a blanket, frisbee, board game and go the High park that is 5 minutes away from home. Follow my suggestion guys 🙂 and enjoy your weekend and outdoors! 

Ingredients: 1 cup water, 6 tbsp butter, 1/4 cup tsp cayenne pepper, 1 cup flour, 4 eggs, 1 cup grated Parmesan cheese.

Preheat the oven to 425F. Combine water, butter and cayenne pepper in a small pot and heat over medium high heat until the butter melts. Dump the flour in all at once and stir quickly until the dough pulls away from the sides of the pot. Remove from heat and let it cool. Meantime, line baking tray with parchment paper.

Once it cooled, beat one egg at a time util fully incorporated with wooden spoon. You will have smooth and silky dough at the end. Use two spoons or a pastry bag to make small size balls of dough, leaving about 1 inch apart. You should get about 30 balls. Bake for 10 minutes at 425 F then reduce the temperature to 375 F and bake for another 20 minutes until golden colour. Remove from the oven and cool on racks.

      1. well, right now, it is a little bit off, cuz i am in the middle of studying for a very important exam and stress eating is a serious problem 😀 i eat more chocolate then i should (75% of cacao or more), but can’t do without.Next week i will go back on track.
