Crispy potato pancakes

I love love potato pancakes..crispy on the outside served with sour cream and fresh cilantro mm.. Such hearty dish. Super easy to make 🙂 

Serving for 2 people. 

You will need 5 medium potatoes, 2 eggs, spices, sunflower seed oil for frying, sour cream and fresh cilantro for serving.

Wash and peel potatoes. Grate them with a cheese grater into a bowl with cold water (enough to cover potatoes). Let it sit there for 20 minutes. In the meantime, in a small bowl whisk together 2 eggs, salt and pepper, oregano, paprika, cayenne pepper, onion, garlic. Once potatoes are ready, rinse them well with cold water and squeeze any excess of water.

Once potatoes dry, mix in egg mixture. It is ready for frying now. Heat the oil in the heavy duty pan on medium high. Scoop a good tablespoon of potato mix and flatten it out carefully. Turn temperature down to medium. Fry for 3-5 minutes per side depending on thickness (or until the edges are golden colour). Serve it immediately with some sour cream and fresh cilantro.

    Your blog is great, I like the inspiration behind it. This also looks like a lovely recipe. I would replace the eggs with flax seed and water as I am vegan, I think it would work well. Look forward to trying it

I love potato pancakes, it’s kind of traditional polish dish, I remember when I was a kid we eat them very often, we didn’t have much money back then and this is very cheap to make and like you mentioned hearty dish, so when I saw your post it kind of brought back childhood memories 😉 now I fancy making some 👍
