I hope you guys had a wonderful weekend and ready for another great week. I want to share a simple, super easy and nutritious breakfast idea with you- raw nut and fruit cookies. Just simply mix together any nuts and dried fruits you love and you have a healthy yet delicious breakfast. Here we go…
1/2 cup dried cherry, 1/2 cup cashew, 1/2 cup almond, 1/2 cup coconut, 2 tbps honey, 1 tbps chia seeds.
Grind cherries and cashew. Roughly chop almonds. In a medium bowl, mix all ingredients until it comes together. Form your cookie! That is it. The shortest recipe I’ve ever written hehe. You could form it in a bar shape and store in the refrigerator for up to a month. Another great idea is to coat this cookie in chocolate and decorate with drizzle of caramel, shredded coconut or chopped nuts and give it away as a gift! Homemade gifts are the best 🙂
