Rustic homemade peach galette

I decided to make one of my favourite summer desserts this time – Peach Galette. This is a simple, honest and delicious recipe of galette, made with fresh yellow peaches tossed with some sugar, butter and vanilla. I have a love for home made crust; I make several batches of dough in advance, and just wrap them in plastic wrap and keep it in the freezer until needed. If you have never made homemade crust before, you will be surprised at how easy it is to make it. Make this peach galette while peaches are at their best 🙂
Crust: 1 ¼ cup flour, ½ cup cold butter, 1 ½ tsp sugar, ¼ tsp salt, 4 tbsp cold water
Filling: 5 yellow peaches, ½ cup sugar, 2 tbsp butter (melted), 1 tsp corn starch, ½ tsp vanilla extract2015-07-29 11.24.11Cut the butter into small cubes and chill in the freezer for at least an hour.
Prepare the crust. Sift the flour and mix it with salt and sugar. Incorporate butter to the flour, using a fork or food processor, until crumbs are formed. Slowly add the water and stir until it’s incorporated.
Wrap the dough in plastic and chill in the fridge for about 30 minutes.
Meantime, preheat the oven to 400 F and prepare your filling. Cut the peaches into thin slices. Combine sugar and corn starch, and add it to the peaches, mix well. Add melted butter, vanilla extract and mix well again. Set it aside.
Once the dough is chilled, gently roll to about 12 inch diameter. Place it on a baking sheet lined with parchment paper. Arrange the peach slices in overlapping circles starting one and a half inch from edge. Fold the edges of the dough over the filling. Sprinkle some confectioner sugar on top of galette. Bake at the preheated oven for 40 minutes.
Serve it with fresh whipped cream on a side.
