Directions:

Melt butter in microwave and let it cool. In a large bowl mix together flour, baking powder and set it aside.

In a separate large bowl beat egg with sugar and vanilla extract for about 5 minutes. Add cottage cheese and mix thoroughly. Add melted butter to it, mix until everything well incorporated.

Gradually add flour mixture to the egg mixture and gently knead the dough just until its combined. The dough should be soft but not sticky. The amount of flour you need depends on how moist is cottage cheese you use.

Preheat oven to 200F. Line baking tray with parchment paper.

Lightly flour your work surface and roll the dough into 0.5 cm thick disk. Cut dough into circle shaped cookie. Fold each cookie in a half. Fold again in a half. Deep rolled side of cookie in the sugar. Bake for 20-25 minutes until its golden bwon colour.

Let it cool for 5 minutes.

I hope you will enjoy it 🙂 and check health benefits of Chia seeds here.

Thank you

    1. Hi Sharon.. it’s an optional step .. I add it some times for nutrition purpose (about tbsp) but it doesn’t affect the taste of the cookie.
I have two pictures posted..one is with chia seeds and the other without 🙂
