This is a recipe for delicious cookie i would love to share with you. It’s full of goodness of cottage cheese and butter. I want to call it healthy because there’s very little amount of sugar in it 🙂 The cottage cheese I use is 5% of fat.
250 gr Cottage cheese
½ cup Butter
1 tsp vanilla extract
¼ cup Sugar
2 cups flour (sifted)
2 tsp Baking powder
Melt butter in microwave and let it cool. In a large bowl mix together flour, baking powder and set it aside.
In a separate large bowl beat egg with sugar and vanilla extract for about 5 minutes. Add cottage cheese and mix thoroughly. Add melted butter to it, mix until everything well incorporated.
Gradually add flour mixture to the egg mixture and gently knead the dough just until its combined. The dough should be soft but not sticky. The amount of flour you need depends on how moist is cottage cheese you use.
Preheat oven to 200F. Line baking tray with parchment paper.
Lightly flour your work surface and roll the dough into 0.5 cm thick disk. Cut dough into circle shaped cookie. Fold each cookie in a half. Fold again in a half. Deep rolled side of cookie in the sugar. Bake for 20-25 minutes until its golden bwon colour.
Let it cool for 5 minutes.
